Sherston

Sherston is a white overnight dough loaf made to a century old recipe from the Cotswold village of Sherston.

David Herbert bought a bakery in Sherston from Mr Thompson the baker, who still made his bread in the traditional way, fermenting the dough overnight before processing.

It is in tribute to this meticulous tradition that the loaf has been named. Customers who remember life before the 60s often comment on how Sherston tastes just how bread used to.

Quotations

In time-honoured fashion, we use a minuscule amount of yeast to make the dough and then leave it overnight to rise, which gives the amazing taste and texture that makes the Sherston our number 1 top seller.

Production Method

From a dietary point of view, the benefit of properly fermenting the dough (as opposed to the speedy chemical assisted processing of modern techniques) is in the ease of digestion: you'll get no tummy problems with this loaf.

Sherston keeps extremely well at least a week if cool/dry and if frozen will keep well for at least a couple of months.

Tom's Grandmother-in-law's tip: slice before freezing (you'll have to slice it sooner or later) and then you can enjoy your loaf, slice after slice, in your own time, without having to defrost the whole loaf. Easy!

Storage

Sherston makes the BEST toast in the world! It therefore goes without saying that for cheese toasties, beans on toast, admirably upstanding soldiers, butterfly sandwiches, belly satisfying ploughman's, hand cut ham barn door-stoppers, the fundamental building block for a memorable summer pudding or bread and butter pudding, courteous croutons, soft jam sandwiches or toast dripping with butter and honey, SHERSTON IS THE BEST!
