Royal Icing Recipe

Our Royal Icing Recipe is really simple, almost as simple as fondant icing. We love to ice our Christmas Cake recipe with this homemade royal icing recipe for a truly traditional cake.

We like to leave ours spiky, like an authentic snow scene but you can of course smooth yours down with a pallet knife.

Ingredients

  • 2 egg whites

  • 500g icing sugar

  • Lemon juice

Method

  1. Whisk the egg whites until stiff

  2. Add a whole 500g box of icing sugar a bit at a time

  3. Add the squeeze of lemon juice

  4. Use a pallet knife to cover the cake with the icing
