Beer Pizza

This beer pizza recipe is from Fabulous Baker Brothers: Bite of Britain. A Brewer’s Garden pizza, this little beauty was made in the episode filmed around Bakewell.

The beer they used was Thornbridge Jaipur IPA, any good pale ale will be fine though.

In the programme Henry gets carried away topping the pizza with the finest garden produce; honey, nasturtium leaves and flowers, borage flowers and fennel fronds. You could top your beer pizza recipe with these when it comes out of the oven.

Ingredients

  • For the base

  • 320ml pale ale

  • 7g dried yeast

  • 500g strong white flour

  • 8g salt

  • Rapeseed oil

  • Semolina

  • For the topping

  • 3 tbsp rapeseed oil

  • 1 large onion

  • 3 large swiss chard leaves, stalks sliced

  • 100ml pale ale

  • 200g blue cheese

  • 4 figs quartered

Method

  1. For the base

  2. Add the yeast to the beer and stir until dissolved

  3. Tip the flour into a bowl and add the salt and rapeseed oil

  4. Add the yeast mixture to the flour mix and bring together

  5. Knead for 5 minutes then place in a greased bowl, leave to rise until doubled in size, 60-90 minutes

  6. Remove it from its bowl and knock out by kneading for two minutes

  7. Set aside to rest for another 10 minutes

  8. Scatter a clean surface with semolina and roll out either two pizza bases or four smaller ones

  9. For the topping

  10. Heat the oil in the pan over a medium heat

  11. When hot add the onion and cook for a further 5 minutes

  12. Pour in the beer and allow it to simmer until syrupy

  13. Add the chard stalks and cook for 5 minutes

  14. Add the chard leaves and a pinch of salt, take off the heat so they wilt in the residual heat

  15. Spoon the chard and onion over the pizza base

  16. Crumble over the cheese and scatter over the fig quarters

  17. Slide the pizza into an oven stoked as hot as it is able to go and cook for 8-12 minutes until the dough is golden
