Ultimate Turkey Melter Recipe

We all know how good a Boxing Day sandwich can be, so we imagined what it would be like if we ramped it up. Flat breads are the perfect vessel for putting together far too much filling, with chunks of roast turkey, a punchy saucy, and using up those scraps from the cheese board. You have the makings of a darn good melter, all there in the fridge!

Watch Tom and Henry getting busy with the leftovers on Waitrose TV, where you can also see how Tom makes the flatbreads for this recipe.

Serves 4

  • 4 sourdough flatbreads, or other wraps

  • 400g picked roast turkey

  • 4 tbsp cranberry sauce

  • 200g mixed Christmas cheese (Stilton, cheddar, Brie, etc.)

  • 4 rashers cooked streaky bacon

  • 4 tbsp bread sauce, mixed with 2 tbsp Dijon mustard

  1. Lay the flat breads down, spread the mustard bread sauce on. Add the turkey, bacon, cranberry sauce and cheese. Fold the wrap up nice and tight.

  2. Either grill in a panini machine until crispy and melted, or gently fry in some butter for 3 mins on each side.
