Banana & Pecan Pancake Recipe

This caramelised banana & pecan pancake recipe is a delicious sweet topping for either our sourdough pancake recipe or our simple pancake recipe.

Serves 4

Ingredients

  • 2 bananas sliced thick

  • 20g butter

  • 20g pecans, toasted and crushed

  • 2tsp caster sugar

  • 2 glugs of rum

  • 4 scoops of vanilla ice cream

Method

  1. Heat a pan and sprinkle in the sugar, as it starts to caramelise add the bananas, shake around for a few minutes then add the butter, pour in the rum and flambé, then boil till it becomes a sauce.

  2. Spoon on to the pancakes, add a dollop of ice cream and sprinkle with the pecans.

  3. Roll up and devour.
