Cornbread Burger

This Cornbread Burger recipe was created in Winchester for Fabulous Baker Brothers: Bite of Britain. Tom and Henry came up with this amazing Cornbread Burger recipe after visiting Rob Janaway’s Newlyn Farm, home to his short horn and Hereford cattle.

Make this burger with the finest beef and case it with the handmade cornbread roll and serve with hot chilli salsa on the side.

Serves 4


  • For the buns
  • 250g plain flour
  • 250g cornmeal plus extra for dusting
  • 100g creamed sweetcorn
  • Pinch of salt
  • 1 tsp bicarbonate of soda
  • 2 eggs
  • 150ml buttermilk
  • 100g melted butter
  • For the burger
  • 1kg best quality minced beef
  • 8 slices of Gruyere cheese
  • For the salsa
  • 1 large roasted red pepper sliced
  • 1 tomato roughly diced
  • 1/2 red onion roughly diced
  • Juice of 2/3 limes
  • 1/2 bunch of coriander
  • 2 tbsp jalapeños
  • Rapeseed oil


  1. For the buns
  2. Preheat the oven or barbecue to 240°C
  3. Place the flour and cornmeal into a bowl along with the sweetcorn, salt and bicarbonate of soda and mix together
  4. Whisk the eggs, buttermilk and melted butter together
  5. Pour the wet ingredients into the dry and work together into a dough
  6. Roughly shape the dough into bun shapes and place them into individual shallow ovenproof bowls
  7. Scatter over some extra cornmeal and bake in the hot oven for 15-20 minutes
  8. When cooked, remove from the bowls, leave to cool and slice in half.
  9. For the burgers
  10. Shape the beef into 8 patties
  11. Season the outside and heat a griddle pan
  12. Cook the burger on each side for 5 minutes
  13. Place a slice of cheese on the burger, turn off the heat and leave to rest
  14. For the salsa
  15. Mix all the ingredients together and season to taste
  16. To serve
  17. Construct the burger by placing 2 cooked patties on top of the base, topping with salsa, and finally finishing with the lid
  18. Serve with extra salsa
