Bread Sauce  Recipe

Our bread sauce recipe is a perfect way to use up any leftover bread.

The perfect comforting accompaniment to any roast bird.

Serves 4-6


  • 20g butter
  • 1 small onion, diced
  • 1 pint of whole (full fat) milk
  • 1 clove
  • 1 sprig of thyme
  • 1 bay leaf
  • 300g white breadcrumbs
  • Salt and cracked black pepper


  1. Melt the butter in a pan
  2. Add the onion and gently soften for about 5 minutes
  3. Pour in the milk
  4. Add the clove, thyme and bay
  5. Bring just to the boil, remove from the heat and leave to infuse for 30 minutes to 1 hour
  6. Spoon out the herbs and clove
  7. Add the breadcrumbs and heat again until thick and lumpy
  8. Season with plenty of salt and cracked black pepper
  9. If you like a smoother sauce, pulse in a food processor
  10. If you like it thicker adjust the milk amount to taste
