Herring Roes on Toast Recipe
This dish in one of three things I remember my grandfather cooking, along with his special breakfast recipe and mint sauce. Herring roes are the sperm sacs of male herrings, but don’t let this deter you, they’re absolutely delicious and surprisingly cheap aswell.
2 slices of Quern sourdough
6 Herring roes
1 tsp capers
1 squeeze lemon
Pinch of chopped parsley
Salt and pepper
So quick to make that I would put the toast on first.
Heat a frying pan and add half the butter. When foaming tip in the roes. Brown off for 2mins.
Carefully turn and add the capers. After 2mins add the remaining butter and let it foam up. We want to make a 'beurre noisette' or brown butter. This is when the whey solids cook and brown, giving the butter a nutty taste.
When it goes brown, squeeze in the lemon juice and add the parsley.
Spoon quickly on to the toast and devour. A glass of prosecco wouldn't go amiss here.
