Victoria Sponge Cake Recipe
Our victoria sponge cake recipe makes 4 mini victoria sponge cakes. We sell these little beauties in our shops. This victoria sponge recipe is great twist on a classic British recipe.
These mini, light and fluffy victoria sponge cakes are always a hit in our Kid’s Classes, but are a favourite with everyone old or young.
You will need mini sandwich tins for this recipe, and our butter-cream recipe to fill your delicious cakes.

200g self raising flour
200g unsalted butter
200g caster sugar
Heat the oven to 160°C and line 8 mini sponge tins with baking paper.
Cream the butter and sugar together until fluffy.
Add the eggs one at a time, mixing continuously until smooth and silky.
Sift the flour in to the mixture, and fold in until fully combined.
Divide the mixture between the 8 baking tins and bake for 15mins at 160°C
Allow to cool
Sandwich together and fill with your favourite jam and butter-cream
