Buttercream Icing Recipe

This is a delicious and simple buttercream icing recipe, which is great for Victoria Sponges or Fairy Cakes. Sandwich it up with your favourite jam.

Serves 1 cake or 8 minis


  • 125g butter

  • 250g icing sugar


  1. Make sure the butter is room temperature.

  2. Using a mixer or a lot of elbow grease, carefully mix the icing sugar into the butter until you have a lovely smooth mixture.

  3. This will be enough to ice a big Victoria sponge or up to 8 mini sponges
