This cheese toastie recipe is based on Todd’s Toasties from Trethowan’s dairy, immortalised in Tom’s BBC4 program, In Search of the Perfect Loaf. Quite possibly the finest bread snack known to man.They are quick and easy to make and the aroma is haunting.

Tips: Use 5 day old sourdough bread for a better, firmer toastie and be sure to use the best cheddar you can get. Cut the loaf at an angle to achieve a larger slice to hold even more of the cheese. In our bakery we use Keen’s unpasturised cheddar, a fellow 5th generation artisan family, making the tastiest, earthiest cheese around, perfect in your full bodied sourdough. Also tastes great cold.

  • 2 Slices sourdough
  • 50g Finely chopped onion and leek
  • 100g Grated mature cheddar


  1. Sandwich the grated cheddar, onion and leek evenly between the two fairly thinly sliced pieces of sourdough and place in an oiled and preheated toastie machine for several minutes, until the cheese has melted into the bread and formed the most amazing golden crust.
  2. Eat straight away. Warning: hot cheese on chin, danger of burnt mouth due to irresistible aroma.
