Spaghetti Carbonara Recipe
This is winter comfort food at it’s best.
Packet of pasta
Glug of olive oil
Fresh parsley sprig
75ml double cream
Salt and pepper
4 rashers of bacon
Knob of butter
50ml white wine
Get a pan of salted water onto boil. Meanwhile, cook the bacon in a little oil until nicely crispy, when cooked, splash in the wine and let it boil away until only a little is left.
Beat the eggs, cream, parmesan and salt and pepper together until mixed.
Once the pasta is cooked, add it into the pan with the bacon mixture (note– you will need to cook the bacon in a big enough pan to allow this) and pour the cream over.
Toss the pasta and sauce together, grate the nutmeg, more black pepper and top with chopped parsley and a knob of butter.
