This caramelised banana & pecan pancake recipe is a delicious sweet topping for either our sourdough pancake recipe or our simple pancake recipe.

- 2 bananas sliced thick
- 20g butter
- 20g pecans, toasted and crushed
- 2tsp caster sugar
- 2 glugs of rum
- 4 scoops of vanilla ice cream
- Heat a pan and sprinkle in the sugar, as it starts to caramelise add the bananas, shake around for a few minutes then add the butter, pour in the rum and flambé, then boil till it becomes a sauce.
- Spoon on to the pancakes, add a dollop of ice cream and sprinkle with the pecans.
- Roll up and devour.
