Sourdough, Grains and Ferments with Tom Herbert

  • We know lots of you have been baking the last few months, with this in mind we have been developing a series of sourdough courses perfect for all levels. Whether you are new to baking, have some experience, or would consider yourself an old hand. Whatever stage you are at a shared experience, with like minded people; what better way to spend the day?

    Hobbs House Bakery was established in the Cotswolds in the; 1920’s and we are a true family business with five generations of baking experience we are happy to share with you.

    This is the third course in our trilogy aimed at those with plenty of experience working with sourdough. We will be baking with our established sourdough starter as well as discussing other methods of fermentation and how they can improve your gut health. 

    Freshly milled grains will be key to baking a variety of different products. Aspiring to 'The World's Healthiest Loaf' under Tom's expert tuition, you will gain invaluable bread making know how as well as learning what you knead to know to recreate this delicious loaf at home. We will be rolling oats, kibbling barley and sharing our fermenting techniques to create a unique loaf. We will be baking sourdough as well as the humble crispbread washed down with a freshly milled rye and chocolate brownie. 

    As always, Tom will ensure that you go home with a wealth of knowledge as well as a bag full of delicious goodies to share with family and friends.

    Joining Instructions
    Coffee and freshly baked pastries will be served 30 minutes before the course begins. The course will start promptly at the advertised time. Lunch with a glass of wine will also be included. We provide all equipment, including aprons here at the Hobbs House Bakery Cookery School, so all you need on the day is yourselves and a passion for bread making.

    Our School is located in the heart of Chipping Sodbury above the original Hobbs House Bakery and Butchery on the High Street.

    School parking

    There is free parking on the opposite side of the road from the Hobbs House Cookery School, places are limited or pay on the School side (max 2hrs stay).Alternatively there is a free 24hr Car park round the back of the school situated on Barnhill Road via Wickwar Road. Follow signs towards Waitrose and the car park can be found on the left hand side. The high street is a 2 minute walk through the link road.

    Transport and taxis

    The nearest train stations to Hobbs House School are Yate which is 1.7 miles and Bristol Parkway which is 6.6 miles. Chipping Sodbury Taxis are always at hand, 07891 190984.

    Dietary requirements & food allergies

    Please inform us in advance of any food allergies or dietary requirements so where possible, we can do our best to adapt any refreshments provided to your individual needs.

    Access requirements

    Our School classrooms are on the first and second floor – accessed by stairs only. If mobility is likely to be a problem, please let us know. We will also do our best to accommodate any physical impairments or learning difficulties – please contact us to discuss.


    Should you be travelling from afar, the local area has a great selection of beautiful hotels and guest houses to rest your weary head. We would recommend the Moda House located on the High Street in Chipping Sodbury. A little further afield, Calcot Manor is a spa hotel located about 15 minutes from the school or alternatively stay with Trevor and Polly Herbert in a secluded cottage, on the family farm, on the outskirts of the Badminton estate.
