Shortcrust Pastry Recipe

600g strong white flour
200g cold butter, diced
200g cold beef dripping, broken into pieces
200ml ice cold water
In a food processor, blitz the dripping and flour together until there are no lumps. Add the cold butter and continue to mix until the mixture looks like breadcrumbs.
Add the iced water gradually and keep mixing until you start to get a dough. Roll it into a sausage, wrap tightly in clingfilm and chill in the fridge for at least 30 minutes.
