    Oat and Banana Vegan Cookies


    180g soft brown sugar

    75mls sunflower oil

    40mls water

    180g self raising flour

    1 teaspoon ground cinnamon

    ½ teaspoon salt

    1 ripe banana - mashed

    1 teaspoon vanilla extract

    200g rolled oats

    50g sultanas



    1. Preheat the oven to 160c, then in a bowl mix together the sugar, oil and water
    2. In a separate bowl sieve the flour, cinnamon and salt together.
    3. Add the mashed banana and the vanilla to the sugar mixture and mix well.
    4. Add the sieved flour and fold until it is incorporated into the banana and sugar mixture.
    5. Finally add the oats and sultanas and stir well.
    6. If the mixture seems wet, allow it to sit for a few minutes so that the oats can absorb the extra water.
    7. Roll into 12 balls and place onto a lined baking sheet. Flatten them lightly, they will spread but not hugely.
    8. Bake at 160C for about 20 minutes or until golden brown. They should be crisp on the outside with a slightly chewy middle.
    9. Allow to cool on a wire rack and store in an airtight container.
