    Sourdough Pesto


    • 1 slice day old sourdough bread roughly cubed
    • 1 Large bunch fresh basil
    • 15g parsley
    • 100g pine nuts
    • 1 garlic clove crushed
    • 150ml extra virgin olive oil
    • Splash cold water
    • Squeeze lemon juice (about 1 teaspoon go easy it shouldn’t taste lemony, just fresh)
    • Sea salt and freshly ground pepper



    1. Put the bread into a food processor bowl and process to breadcrumbs
    2. Add the rest of the dry ingredients and process until coarse
    3. Add the liquids and process to combine leaving a little texture, being careful not to overdo it If the bread is still fresh it may get stodgy
    4. Add a little more water if it seems too thick, consistency varies with the bread
    5. Add more salt, lemon or garlic to taste
