Sourdough Pesto
Ingredients
- 1 slice day old sourdough bread roughly cubed
- 1 Large bunch fresh basil
- 15g parsley
- 100g pine nuts
- 1 garlic clove crushed
- 150ml extra virgin olive oil
- Splash cold water
- Squeeze lemon juice (about 1 teaspoon go easy it shouldn’t taste lemony, just fresh)
- Sea salt and freshly ground pepper

Method
- Put the bread into a food processor bowl and process to breadcrumbs
- Add the rest of the dry ingredients and process until coarse
- Add the liquids and process to combine leaving a little texture, being careful not to overdo it If the bread is still fresh it may get stodgy
- Add a little more water if it seems too thick, consistency varies with the bread
- Add more salt, lemon or garlic to taste
