This sourdough pancake recipe is a great way to use up any excess sourdough. The sourdough starter gives these pancakes a depth of flavour that is perfect with both dinner and pudding course.
We have served our sourdough pancake recipe as a savoury dish with merguez sausages or they are great served sweet with your favourite toppings.
Some sourdough regimes sourly suggest you pour surplus dough down the sink. Not any more: let a surfeit of sourdough starter spark a pancake party.
Add milk, the sourdough, salt, flour and whisk all together.
Melt a big knob of butter in a large frying pan and whisk into the pancake batter.
Finally, fry the pancakes in the large frying pan, tossing occasionally until they are golden on both sides. Lubricate your frying pan between pancakes with a little oil on kitchen paper.
Serve while still warm.
