Gingerbread Biscuits

Gingerbread Biscuits

  • 350g plain flour
  • 2 teaspoon ground ginger
  • ½ teaspoon ground cloves
  • ½ teaspoon ground cinnamon
  • ½ teaspoon bicarbonate of soda
  • 100g butter
  • 175g dark soft brown sugar
  • 1 egg
  • 4 tablespoons golden syrup

  1. Mix the flour and spices together
  2. Rub in the butter until it resembles breadcrumbs
  3. Add the sugar
  4. In a separate bowl, mix together the egg and golden syrup, then add to the dry ingredients.
  5. Mix together until it forms a soft dough. Tip out onto a clean work surface and knead for a minute or two until the dough is smooth.
  6. Pre-heat the oven to 180C
  7. Roll out the dough to the thickness of a pound coin and cut out shapes with cookie cutters. If you want to hang them on the tree remember to punch out a hole at the top, a straw is really good for this.
  8. Lay the biscuits onto a greased baking tray or baking parchment and bake for 10 – 15 minutes until golden brown.
  9. Leave to cool before decorating with icing and sprinkles. Thread with ribbon and hang them on your tree.
