    Our Royal Icing Recipe is really simple, almost as simple as fondant icing. We love to ice our Christmas Cake recipe with this homemade royal icing recipe for a truly traditional cake.

    We like to leave ours spiky, like an authentic snow scene, but you can of course smooth yours down with a pallet knife.

    Royal Icing Recipe

    Ingredients

    • 2 egg whites
    • 500g icing sugar
    • Lemon juice

    Method

    1. Whisk the egg whites until stiff
    2. Add a whole 500g box of icing sugar a bit at a time
    3. Add the squeeze of lemon juice
    4. Use a pallet knife to cover the cake with the icing
