Christmas Pudding - Stir Up Sunday

Ingredients

  • 175g sultanas
  • 175g raisins
  • 100g whole prunes
  • 50g chopped dates
  • Total 500g fruit, the mix can be varied
  • 30g chopped glace cherries
  • 75ml brown ale
  • 25ml brandy
  • 1 apple, peeled, cored and grated
  • Juice and zest of 1 orange
  • 3 eggs
  • 175g muscovado sugar
  • 125g shredded suet
  • 125g sourdough breadcrumbs
  • 100g self-raising flour
  • 1 teaspoon mixed spice

Kit

  • 1.5 litre pudding basin

Method

  1. Mix together the dried fruit in a bowl.
  2. In a separate bowl mix together the dry ingredients; the suet, breadcrumbs, flour, spice and sugar.
  3. Combine the two bowls together and mix well.
  4. Next, mix your apple, orange, brandy and stout together, then stir into the dry ingredients.
  5. Place the mixture into the pudding basin, cover the top with a couple of layers of greaseproof paper and foil.
  6. Gather and tie with string.
  7. Stream for approximately 3 ½ hours, then store until Christmas day.
