

Mix all the ingredients together and knead for about 15 minutes by hand or approximately 8 minutes if using a machine.
Allow to prove in a warm place for 2-3 hours or until well risen
Shape into 80g balls or make them smaller if you prefer.
Leave, covered, on a tray for about 45 minutes to rise
Meanwhile preheat your fryer to 165°C
Fry the doughnuts for about 3 minutes on each side or until golden brown.
Drain well and place onto some kitchen paper to absorb any excess oil before tossing in caster sugar.
