    Sourdough Doughnuts

    Ingredients

    • 500g strong flour
    • 275g warm milk
    • 100g sourdough starter
    • 50g soft butter
    • 50g caster sugar
    • 10g salt
    • Extra sugar for coating after cooking

    Method

    1. Mix all the ingredients together and knead for about 15 minutes by hand or approximately 8 minutes if using a machine.

    2. Allow to prove in a warm place for 2-3 hours or until well risen

    3. Shape into 80g balls or make them smaller if you prefer.

    4. Leave, covered, on a tray for about 45 minutes to rise

    5. Meanwhile preheat your fryer to 165°C

    6. Fry the doughnuts for about 3 minutes on each side or until golden brown.If you make smaller ones then they will take a little less time to cook.

    7. Drain well and place onto some kitchen paper to absorb any excess oil before tossing in caster sugar.
